Chicken Soup Recipes



Chicken soup recipes are passed down from generation to generation and each family seems to have a recipe that is said to cure many ills from hangovers to asthma. Although the medicinal effect might have more to do with the amount of TLC in a pot of homemade soup, there does seem to be some scientific evidence that the “Jewish antibiotic” does actually work!

The basis for a good soup is the stock. Traditionally the soup was made from older, tougher and more flavoursome chickens to which water, vegetables and herbs were added and then boiled for a long time. Thus the soup was able to produce its own stock, but today we mostly do not have the time.

I use the best quality powdered stock I can afford. Check the list of ingredients and my rule of thumb is that if I do not recognise an ingredient as a common food then it is an additive that should not be in my food! Of course you can always make your own stock.
