Basic Grilled Chicken Breast Recipe

Ingredients

  • 4 large skinless boneless chicken breasts.
  • 1 tablespoon melted butter (or for a healthier option substitute one tablespoon olive oil).
  • salt and black pepper.

Method

  1. Pre-heat the grill.
  2. Combine the chicken with the butter or olive oil and salt and pepper in a bowl. Make sure that the chicken breasts are coated all over with the mixture.
  3. Grill the chicken breasts, 10cm (4 inches) from the heat, for 7 to 8 minutes until lightly browned.
  4. While the chicken breasts are grilling, make the sauce of your choice.
  5. Turn the chicken and continue grilling for another 5 to 7 minutes.
  6. Place chicken on a warmed serving platter and pour the sauce over and serve.

Ingredients

  • 250g (8 ounces) white button mushrooms cleaned and chopped

  4. Melt the butter in the pan and add the corn flour to form a paste.
  5. Add the milk and the mushroom pan juices, stirring continuously until the sauce thickens.
  6. Add the mushrooms and wine and heat through.

Method

  1. Gently fry the onion and apple in half of the butter until the onions are slightly brown and the apple is tender.
  2. Remove the apple and onion from the pan and reserve.
  3. Melt the rest of the butter and add the corn flour to form a paste.
  4. Add the chicken stock and stir continuously until the sauce thickens.
  5. Remove from the heat.
  6. Add the curry powder and apple and onion mixture.
  7. Gradually add the coconut milk while stirring.
  8. Heat the pan on a low heat and add the cream, heat through.
